semi homemade ice cream sandwiches

I needed to bring dessert over  to my SIL the other night and decided to liven up some cookies by making ice cream sandwiches. I was a bit lazy and although normally would choose to make homemade cookies with Real ingredients, I did not have the time nor energy. So I cut corners by buying premade cookie dough and store bought ice cream.


The cookies I bought were Pillsbury Simply Cookies and Haagen Dazs Ice Cream. If you follow this blog, you will know how I was swayed into buying those particular brands. If not click here and here.


But on to the cookies. I baked the cookies - easy enough.

For the ice cream I knew that in order to spread it on the cookies I would need to keep it out to let it thaw a bit. Well I let the ice cream sit out for way too long. It needed to be soft, but ended up very runny. You can see the ice cream spilling off the sides.

Nevertheless once the cookies cooled (I had to put them in the freezer because of poor time management) I spread the ice cream on the cookies.


Then I put them in the freezer to freeze up, wrapped them in plastic, and they were ready to go.


Now here in the Northeast it is officially fall and although ice cream has no seasons, the consumption will probably decrease over the next few months. But for those who live in warmer climates, a la SoCal, ice cream is more of a year round treat. This really was an easy dessert to do that seemed much more fancy than it was. I think it impressed my family. Until they read this and realize that it really was not much work at all.
