Homemade Cilantro Lime dressing

This is a great tangy dressing that is similar to Cafe Rio's Cilantro lime vinaigrette, which I love!

First the comparison to a bottled dressing.



Ingredients
Water, Vinegar, Sugar, Extra Virgin Olive Oil, Canola Oil, Soybean Oil, Lime Juice Concentrate, Lemon Juice Concentrate, Salt, Contains Less than 2% of Mustard Seed, Onions, Garlic, Spice, Cilantro (Dried), Garlic (Dried), Onions (Dried), Xanthan Gum, Lime Oil, White Wine, Natural Flavoring, Fruit Pectin, Citric Acid, Tartaric Acid, Potassium Sorbate and Calcium Disodium EDTA as Preservatives.
My recipe:
1 bunch of fresh cilantro
6 Tbsp. light olive oil
1 Tbsp rice vinegar
Juice of 2 limes
1/2 tomatillo
1/2 Tbsp. honey
2 cloves garlic


For this recipe I used my food processor and just threw everything in there. You can also mince the cilantro and garlic and just whisk everything together. That's it!

  2. This one is great. Nice and light. I think the hardest thing is the fresh cilantro. I always buy it, but then sometimes I do not use it right away. And I have tried using dried cilantro and it is not the same at all.

    I wonder if you can chop and freeze cilantro like you can green onions. Or would you have to put it in a liquid, like freezing pesto. I'll have to try.

  5. @ Jen - I plan on growing cilantro as well. I just need to prep my garden. Fresh cilantro makes all the difference. I have tried dried and it did not taste good at all.

  6. Ok, I finally made this tonight! I modified slightly by spiking it a bit, which is my habit ; ) We served it tossed over an organic romain and red pepper salad, topped with sliced strips of grilled carne asada and cilantro garnish. It was awesome! And we're going to "recreate" the Cafe Rio salad next time with our lime rice and some homemade tortillas!

    And, with the leftover, I am marinating some sliced organic cherry tomatoes. I can't wait to eat them tomorrow!

  8. I spiked it with a little red wine. Made it very yummy.

    Lime rice is easy. Just make a long grain rice. Substitute part of the water with the juice of 1 lime. Then, in the final stages of cooking, add the juice of another lime and a half bunch of chopped cilantro. Uncover and simmer until the liquid is gone. Fluff and serve.

    I think I tried it once and there was way too much lime. I'll try your method.
