Chimichurri sauce on a steak salad

I have done a series of homemade dressings and have included a tab above, suzyhomemaker sauces, where you can find all of them listed with links.



My latest homemade dressing is a combo dressing and sauce. I was making a salad with steak as the protein. I was trying to think of a good dressing to accompany it. Chimichurri sauce came to mind so I thought why not make it into a dressing.

Chimichurri sauce is a sauce originating from Argentina used on grilled meats. My friend Andrea is from Argentina. I hope she likes my version!

For my salad I included:
Red bell peppers
Tomatoes
Mushrooms
Red onion
Avocado
Romaine
Seared steak

The dressing/sauce
3/4 Cup olive oil
1 bunch Italian (flat leaf) parsley
2 cloves garlic - minced
1.5 Tsp red pepper flakes
1 Tsp cumin
1 Tbsp oregano
Couple pinches of salt and pepper
4 Tbsp red wine vinegar

Mix all ingredients and whisk!


The nice thing about this dressing is that it doubles as a steak sauce.
