mexican street corn sauce

In our CSA bag, we have been receiving a lot of New Jersey sweet corn. It tastes so fresh and crisp. Too bad it will not be in season for too much longer.


My dad found a way to cook the corn in the microwave with the husks still on. Then once it is done, it is supposed to slide right out and there is no cleaning. There is a video here. We tried it twice and it did actually work. I did not cook it for as long as they say on the video though.



Too top it off, #1 found a recipe in the August issue of Runner's World magazine. I adapted my version.

Ingredients:
1/4 cup mayonnaise
2 Tbsp olive oil
2 Tbsp lime juice
3/4 Tbsp chili powder
2 Tbsp chopped cilantro

Directions: 
Whisk all ingredients together.













Brush or spread onto cooked ears of corn.

  1. I've been wanting to try that new way of cooking corn, but when I'm in the store it's just too tempting to leave the mess there so I husk them! The sauce looks good - I never thought of putting a sauce on corn!

    1. This way everything came off very easily and the mess was minimal. Plus you don't have to stand there in the store next to the trash can, you can get you of the store quicker.

      I have only put butter on in the past. This was the first time I ventured out.

  2. So, is the corn completely cooked when it comes out? I'd like to use it to husk, but not cook. I prefer grilling. I'm totally going to make that sauce and put it on the corn before grilling it. I bet it comes out amazing!

    1. It is completely cooked. It won't help get the husk off. But I think you can grill the corn in the husk. That might not make it easier either.

      I only put the sauce on after, but putting it on before sounds yummy!
