sesame ginger quinoa bites

I think quinoa bites are my new favorite snack. Easy to make, high in protein, and so versatile. I made some cheddar chipotle bites and then some sun-dried tomato & Parmesan.


My latest flavor is a ginger sesame. I wanted to try them with an Asian flavor combo and these ingredients are ones I always have on hand. You will notice that the ingredients are almost exactly the same as those I use for my Asian 4-1-1 dressing.

I also decided to bake them a bit differently because of a suggestion from a reader. It actually worked out great and there were less dishes to wash after. Always a bonus!

Ingredients
~ 2 cups cooked quinoa
2 egg yolks - I usually use whole eggs, but I wanted to also feed these to my 9 month old and it is not recommended to give egg whites to infants.
2 Tbsp soy sauce
1 Tbsp rice vinegar
1 Tbsp sesame oil
1 Tbsp ginger

Preheat oven to 350. Mix all ingredients in a bowl until well incorporated. I have been cooking these in a mini muffin pan, put I decided to cook them on a cookie sheet to make clean up easier.  On a cookie sheet, place a piece of parchment paper. Spoon a heaping tablespoons worth of mixture on the sheet, almost like making cookies.



 Bake for 25 minutes, until edges are brown.
