sun-dried tomato & parmesan quinoa bites

This is the second version of quinoa bites. My first version was southwest quinoa bites. I could not find the original pin that inspired me to do the last ones, but I did see a pin for this version.

This is the perfect time for an Italian-style bite because of all the fresh herbs I have growing.



Ingredients:
2 cups cooked quinoa
2 eggs
2 sun-dried tomatoes - reconstituted and finely diced
~ 2 Tbsp shredded Parmesan cheese
~ 2 Tbsp herbs - I used fresh basil, fresh oregano, and fresh rosemary
salt to taste

Directions:
Preheat oven to 350. Grease a mini muffin pan. Mix all ingredients until well incorporated. I mixed all the ingredients, minus the quinoa first and then added the quinoa after to ensure the flavors were well distributed.
















Spoon mixture into muffin pan. Bake for ~ 25 minutes, until edges are browned. These can be eaten as is or maybe served with some tomato or pizza sauce for dipping.
