Peanut butter & cocoa baked oatmeal bites

It might be an understatement to say I am obsessed with making oatmeal bites. I cannot get enough of these simple, healthy, low sugar snacks. They only take about 20 minutes to make. They are all under ten ingredients, and they all taste amazing - if I do say so myself :)

I have made Pumpkin Cocoa Oatmeal Bites. 

But these peanut butter and cocoa oatmeal bites are one of my new favorites. I chose to use peanut butter, but if you have an allergy, you can easily substitute another nut butter for the PB.

I figured out that these bites only have ~1 gram of sugar per bite!*

Baked Peanut Butter and Cocoa Oatmeal Bites


Ingredients

1 cup peanut butter - or any other nut butter
2 Tbsp. honey
2 Tbsp cocoa
2 Tbsp coconut oil
2 tsp vanilla extract
2 eggs
2 cups rolled oats - not quick oats unless you like mushiness

Directions

Preheat oven to 350 degrees. 
Line a baking sheet with parchment paper.
In a medium bowl, mix all ingredients except the oats.
Once combined, add in the oats.
Form into balls approximately the size of a ping pong ball.
Bake for ~15 minutes.

Makes ~ 24 balls.
