Specifically in a suburb of Los Angeles. Although cliche, it is true that there is a lot of people, a lot of traffic, a lot of houses, etc.; but great weather! Then about 5 years ago (5 years already!) #1 and I moved to New Jersey.<br /><br />We now live in a town with a population of ~3600 people (compared to ~193,000 in the Cali suburb). We don't even have a grocery store, so we have to go to the next town over. Now it is only a couple miles, but still.<br /><br />The other day I decided to go to a big kids consignment sale. It was in another town maybe about 15 minutes from our house - population ~ 20,000. I got there and it was packed. Tons of people and the line to check out had about 30-40 people waiting in it. And this was on a weekday in the late morning. I quickly strolled around and left. I was not going to wait in that line just to buy used kids clothes/toys/books.<br /><br />As I was leaving I was thinking to myself, too many people, too many crowds. I guess I am getting old. Things where I didn't have to overthink a schedule or to do list because these were things I ordinarily do. <p></p><p>My laundry schedule was one of them. I decided to do laundry every single day. It may seem crazy and too much but it actually made my life easier. </p><p>Shorter dryer cycles, less to fold. </p><p>Since there are 3 of us on our house, having each person get 2 laundry days a week and then one day for things like sheets, towels, etc. worked perfect. </p><p>I printed it out and stuck it inside the door of the linen closet. Even though we are a few weeks into the new year, you can still start now and get ahead of saving.<br />

I am sure you have heard about the 52 week one challenge. For those that haven't, here is how it works. Every week of the year starting at week 11 you save the corresponding dollar amount.<br />
<br />
Week 1 save $1.00<br />
Week 2 save $2.00<br />
Week 3 save $3.00<br />
And so on...<br />
<br />
At the end of the year you will have $1378.00.<br />

It is fun and not too difficult. #1 and I did it and loved breaking <i><span style="font-size: xx-small;">(not really breaking though</span></i>) open piggy right before Christmas to count the money. We could have easily put it in a separate checking or savings account, but it was much more fun putting actual cash in a piggy bank.<br />
<br />
I think the one bad thing was that right around October, it started to become more difficult. We didn't always have the amount of cash needed so we would have to go to the bank. At some weeks we would forget and then get behind. And on top of that, there are more holidays, birthdays and traveling that tend to eat up extra cash.<br />
<br />
So we decided to do it <b>backwards</b>. Instead of week 1=$1.00 etc, it will look like this:<br />

Week 1 = $52.<br />
Week 2 = $51<br />
Week 3 = $50<br />
<br />
That way when fall rolls around, instead of coming up with $1075 for Oct-Dec, we will be putting about $78 in the piggy.<br />

However, when you are getting rid of things like, I don't know, key chains, erasers, jewelry, papers, magnets, extra game pieces, hair ties, etc, they are so small. A large amount takes a small amount of physical space. So even though you may get rid of 1000 things, you might have only decluttered a few drawers. </p><p>Seeing this happen, over the years I have challenged myself multiple times. I have lost count, but it has probably been at least 5 or 6. </p><p>And now, over 6 years later, I am once again doing a 1000 in 100 decluttering challenge. </p><p>The thing is, accumulating new things and growing out of other things is common. Decluttering is not a one and done. Kids clothes shrink as they grow, tastes change, and items you've kept just-in-case may have never actually gotten used. </p><p>Not only that, but your <b style="font-size: large;"><a href="https://www.suzyandco.com/2018/09/a-clutter-threshold.html" target="_blank">Clutter Threshold</a>, </b>that I wrote about previously, changes. </p><p>So it is time for another challenge and I do not want to wait until the new year to complete it. The less processing and the closer to nature a product was the healthier it is - or so I thought. I really wanted to give my family and myself the best foods with the least amount of unnatural <i>chemicals</i>.<br /> <br /> But somewhere around 2015 I started questioning things. I started doing more research and opening my mind to both sides of the argument. I know it was 2015 because I found a draft post I began back then.<br /> <br />It has taken me a while to write about it, which might be a good thing because over the years I really have been exposed to more science and have done more research. <br /><div><br /></div><div>And I feel like this is a perfect time to write this because lately I have noticed fear-mongering and pseudoscience increase and it is driving me crazy. <br /><h4 style="text-align: left;"><br />The Dirty Dozen List</h4></div><div>Many of you have probably heard of the EWG and the Dirty Dozen list. It states which produce has the highest levels of pesticides. I am not even going to put a link to it because I don't want to send it traffic!</div><div><br /> For a while this list has really bugged me but didn't really dive into it - until now. </div><div><br /> First, this list is only based on conventional produce. So they are <b>only </b>looking at pesticides on conventional grown produce. </div><div><span style="font-size: large;">BUT organic foods also have pesticides. </span></div><div>I know some people believe that organic means pesticide free, but it does not. </div><div><br />It seems like over the last several years. the number one spot on their list has been strawberries. I have always wondered, if regular strawberries have the highest amount of pesticide, why? Is there something with that fruit that makes it need more pesticides. And if so, wouldn't organic strawberries also need more natural pesticides. Most likely. Which means that even organic strawberries would have a higher amount of "natural pesticides" if they were measured. </div><div><br /> Second - the amounts of pesticides on food are <u>100 to 1000 times</u> lower than the lowest amount that would produce an effect. For a long time I believed that less processing was better, that organic was best, that GMOs were evil, that there were chemicals and toxins smothering our food and I had to make sure I wasn't feeding that to my family. </p><p>But the nice thing about having an open mind, listening to science, and continually educating yourself is that you learn new things and sometimes it can make your life so much simpler! </p><p>I now know that organic isn't better, gmos are not dangerous, and that our food supply with all the additives and preservatives that have chemical-sounding names are not unhealthy for us. </p><h4 style="text-align: left;">So here are 4 ways I have made ingredients and cooking more simple</h4><p></p><ol style="text-align: left;"><li>I mostly buy salad dressing. I have a ton of <b><a href="https://www.suzyandco.com/search?q=dressing" target="_blank">dressing recipes</a></b>, and making it really is easy, but I found a store-bought brand I LOVE and now I just grab a bottle. </li><li>I buy boxed snacks. I was so afraid of sugar and other ingredients and really it is not that bad and vilifying food can actually be harmful. I cannot tell you how nice it is to buy some crackers or granola bars at the store. </li><li>Soup - Even though soup is pretty simple, it is also simple to open up a can and heat it up. I ALWAYS used to make soup from scratch. And I still like to. But having those cans available to grab for a simple lunch or dinner is fantastic.</li><li>Frozen breakfast sandwiches - I would have NEVER bought these before. The ones you just heat up in the microwave. But I bought them not too long ago and again, having a breakfast I can nuke that is quick and filling makes my life so much happier! </li></ol><p></p><p>I still cook all the time and do enjoy making things from scratch. I love making cookies and usually never buy them. I bake bread almost weekly, I made homemade spaghetti sauce, homemade pizza with homemade dough, just to name a few. But I no longer feel bad about food with more than 10 ingredients, or food that is not labeled "real". I really have loved doing it, despite the fact that I have no design background or training. I just liked to play around with fonts and pictures and clipart and layouts. </p><p>Fast forward to this past summer. We were vacationing at the beach and I bought a postcard. Wasn't sure who I would send it to. While driving home, I thought how cute it would be to send it to my daughter and highlight the great things about the trip. Kids love getting mail, so I thought she would get a kick out of it. </p><p>Then I thought it would be great to have a bunch of postcards just to keep track of our lives. So that in years to come, we could go back and reread them and reminisce. Now, I know I can just journal, but here's the thing. I don't really like writing. I know it seems weird since i have a blog, but I really don't. I realized a bit ago how I like simple, short and sweet. I bought it years ago and I cannot even remember why I got it. The problem was, it had a really small food area. When I wanted to measure 500 grams of flour, I had to balance a paper plate on the scale and hope it did not tip over. </div><div style="text-align: center;">It did, several times. </div><div>So I finally broke down and bought this simple, inexpensive food scale and it is wonderful! I LOVE it. Measuring now is so much easier and I love that it was not expensive. Another plus is it is super light. So I don't have to lug it out when I need to weigh ingredients. </div><div>And weighing ingredients is so much better when baking bread.</div><div><b><a href="https://amzn.to/3gBNOkk" rel="nofollow" target="_blank"><br /></a></b></div><div><b><a href="https://amzn.to/3gBNOkk" rel="nofollow" target="_blank">A dough scraper</a></b></div><div>It seems small and silly, but I like a wetter dough when I make bread. It just seems to come out lighter and fluffier. But I HATE dough on my fingers, So anything to help avoid that or lessen it, I will use. So I have found myself using a dough scraper often. </div><div><br /></div><div><b><a href="https://amzn.to/2Dd0joX" rel="nofollow" target="_blank">Flour container</a></b></div><div>I wish I have bought this years ago. I bake every week and flour dust from spilling out of the bags was constant. I found this container on amazon and it is perfect. It makes it so much easier to get flour and I make less of a mess. And I love how much it holds - ~50 cups. So if you buy a big 25 lb bag of flour you may need 2 of these.</div><div><br /></div><div><b><a href="https://amzn.to/3jwOKrV" rel="nofollow" target="_blank">Dutch Oven</a></b></div><div>Not a fancy one! I know you can get really high end one for over $200. But mine I got free from All-Clad when we registered for our wedding. It was similar to <b><a href="https://amzn.to/3jwOKrV" rel="nofollow" target="_blank">this one</a></b> - not the high end one. I have had it for 11 years and use it all the time and it has held up. So if you want a dutch oven but are scared of the price, this one has been a good one and so much cheaper than others. </div><div><br /></div><div><b><a href="https://amzn.to/31FHjbP" rel="nofollow" target="_blank">KitchenAid mixer</a> - yes mine is pistachio colored</b></div><div>I really didn't want to put this on this list because it is pricey, but it truly makes my life so much easier. I use this more than my blender, my food processor, my instant pot, even my immersion blender which is small and lightweight. It has been one of the truly best purchases I have ever made. </div><div><br /></div><div><b>The tools I don't have</b></div><div><br /></div><div>These few things are those things that I have gotten by without for years so I guess technically I don't need them, even though I want them. </div><div><br /></div><div><b><a href="https://amzn.to/34RR3SF" rel="nofollow" target="_blank">A lame</a></b></div><div>This is used for scoring bread. I usually use a knife which works so so. Recently I found a razor blade which seems to work much better. I really don't need fancy scoring.</div><div><br /></div><div><b><a href="https://amzn.to/2EE7hnA" rel="nofollow" target="_blank">A proofing basket</a></b></div><div>I love how a basket like this creates ridges, but my glass bowls have also seemed to work all these years. </div><div><br /></div><div><b>A proofing box</b></div><div>I actually didn't even know this existed until my cousin who used to be a professional baker mentioned it. One thing with rising bread is getting the temp right. I have many times created soup because I over proofed in a too-hot place, and in the winter sometimes my house is cold. Having consistency would be nice. Although it would be another thing to try to have to find a place for in my small kitchen. </div><div><br /></div><div><b>A double oven</b></div><div>HAHAHA Crazy I know. But I realize how much a cook and bake and how nice it would be. And I realized that I didn't have to get one that goes in the wall, they make them as a stand alone unit. So I changed the name to suzyandco so that anything I write would fit into the name. </li><li>My most popular post to date is still the <b><a href="https://www.suzyandco.com/2012/08/pom-pom-rug.html" target="_blank">Pom Pom rug</a></b> and like I said above, I don't even like doing crafts. </li><li>My posts used to be very nutrition shaming. I didn't even realize it at the time. I just thought I was educating and helping people make healthier choices. Some are old posts I chose to delete since they no longer are relevant, but many times, if I have an idea for a post, I will create a title and then when the moment strikes I will write a post. </li><li>My photography has gotten so much better. I used to take pictures whenever and wherever. The lighting was dark, the staging was non existent, the colors were drab. And although I do not think you have to become a professional photographer to be a blogger, pretty pictures make such a difference. </li><li>I don't like to write!!! I know crazy to say for a blogger. I like thinking about subjects and sharing education, recipes, nutrition, simplicity, etc. But the writing part is not my favorite at all. I probably would be better as a podcaster or vlogger but I also like being behind the scenes. I did start a podcast about simplicity, but it only has a few episodes and is on the back burner at the moment. I feel like I enjoy too many subjects and would really need to pick one and focus on it in order to podcast and I haven't figured that out yet. </li></ol><div><br /></div><div><br /></div>Going forward I will most likely be keeping the theme of simplicity. Simple just seems to infuse everything I do. I like simple recipes. For friends and family who know me and for those who have been following me for a while, it might seem weird for me to say I am not a nutritionist.<br />
<br />
Unfortunately, but also fortunately, legislation was passed in New Jersey. There was a law licensing nutritionists and dietitians stipulating who could use the term nutritionist.<br />
<br />
Despite the fact that I have Master's degree in Nutrition, <br />
<a name='more'></a>I can no longer call myself a nutritionist in the state of New Jersey. This is because I am not also a registered dietitian.<br />
<br />
You may think I am upset about this and I think it is unfair. Obviously it is not ideal, but I am not that upset about it. The reason is because there are so many people now, without any degree whatsoever, calling themselves nutritionists or some title with the name nutrition in it - nutrition coach, nutrition educator, nutrition mentor. A Lot. I see them all the time on instagram.<br />
<br />
Now they may giving out solid advice. But there are way more giving out pseudo-science. Or their information is biased because they are selling something or have a vested interest in telling you a certain way to eat or a certain product to take.<br />
<br />
New Jersey is actually protecting their citizens from people, both the ones biased and the ones who may have only the best intentions. <br />
<br />
So the unfortunate part for me is that I can no longer call myself a nutritionist unless I further my education and credentials. But I really am ok with that. I have been very frustrated and rolled my eyes countless times and the diet/health/wellness industry. I think this was very much needed and will hopefully make a small difference in the amount of "experts" out there giving nutrition and diet advice.<br />

The good thing is that I can still talk about nutrition and food and intuitive eating here on this site and I can still counsel people with diabetes and teach diabetes classes because I am a Certified Diabetes Educator as well.<br />

Even if you are not in New Jersey a huge take-away I have for you from this post is to really take what you hear about diet and nutrition with a grain of salt. I know how hard it is to get through all the information and noise to find out what you really need to be doing for your health. And even experts have different opinions. But if you can find a few reputable people to follow, that really know what they are talking about, that look at trends with a skeptical science eye, and treat people as individuals, that is the person you can put trust in. Most times that will be a dietitian, although those of us with Master's may know a thing or 2 also. :)<br />

I am finding as my awareness of intuitive eating increases I am now noticing how much food shaming there is going on from social media.<br />
<br />
I tend to be on instagram the most because I like the simplicity of it, but I don't like the guilt- trips.<br />
<br />
Here are some of the posts I have seen that may seem like logic to the person making the post but are actually shaming to the people reading them. <br />
<br />
<blockquote class="tr_bq">
"eat for the body you want, not the body you have"</blockquote>
<blockquote class="tr_bq">
"this isn't a diet, it's a lifestyle" - while all their posts talk about weight loss </blockquote>
<blockquote class="tr_bq">
"natural energy, balanced blood sugar, reduced cravings, better sleep, weight loss, wake up refreshed, anti-inflammatory" - they are just trying to sell you something and are using pain points to appeal to you </blockquote>
<blockquote class="tr_bq">
"you say you want to look better, feel better and live better...but you continue to eat like shit" - yup someone said that. How is that motivating? Tough love? </blockquote>
<blockquote class="tr_bq">
"you are what you eat, so don't be easy, fast, cheap or fake." </blockquote>
<blockquote class="tr_bq">
"junk food satisfies you for a minute, healthy food satisfies you for life." </blockquote>
<blockquote class="tr_bq">
"looking to fit into your closed better? Be like your PC, don't accept cookies" </blockquote>
<blockquote class="tr_bq">
"you can live in the gym, but if you don't eat clean you're wasting your time"</blockquote>

And it seems like every macronutrient is the enemy -<br />
<br />
carbs are bad, sugar is addictive<br />
protein is ok, but it should "lean" protein or plant-based<br />
fat - go for the "healthy fats"<br />
<br />
Even though I am a nutritionist, I just don't think our lives were meant to be stressing that much about the foods we are eating. I would love less noise on social media about "healthy eating" and diets, but I know that is a tall order to fill.<br />
So I can only hope that through this blog and my own social media posts I can help cut through the nutrition noise and bad advice from so many health coaches out there with very little experience in the science of nutrition and help others to look at food differently and eat more intuitively.<br />

It is made with a base of bananas and then you can add other ingredients to jazz it up.<br />

First off I don't like bananas. I have them maybe 3 times a year.<br />

<a name='more'></a>But secondly, ice cream is nice! Ice cream is good! Ice cream is fine! If you want ice cream have ice cream. You do not have to deny yourself ice cream and then make some sub-par substitute to satisfy your cravings.<br />
<br />
Will it satisfy your cravings? Not mine.<br />
<br />
Now the other side it, if you generally love bananas and "nice cream" is something you really love and are so happy to get to eat - go for it. Not because you want to be healthy, but because you genuinely and truly want it. Go crazy and add peanut butter, or chocolate chips, or cocoa, or all of them.<br />
<br />
But the more we try to substitute "healthy" foods for the foods we are really cravings the more we are ignoring what our body wants and how our body feels. We need to be more mindful of when we eat so that ice cream is just ice cream and "nice cream" is not punishment.<br />

If you are budgeting and want to save some money of food you may want to consider making homemade bread. Food costs seem to be one of the largest expenses in most people's budget and since it is not a fixed cost, it is something you may be able to cut down on. For some, homemade might be more expensive, but for us it is cheaper because we like the bakery breads, not the packaged.<br />

I always make the same bread. I may vary it slightly but 98% of the time I use my <b><a href="https://www.suzyandco.com/2020/01/homemade-bread-in-dutch-oven.html" target="_blank">Homemade Bread in the Dutch Oven.</a></b> It has never failed me.<br />

If you are worried about the time it takes to make bread, my recipe only takes 3 hours and 1.5 of those hours is letting the bread rise - so no babysitting, and ~45 minutes is the bread baking - so you can do other things during that time as well.<br />

So when figuring out the cost of my homemade bread I used my recipe.<br />
<br />
I compared cost to my local grocery store, which is Shoprite and Amazon. The flour and salt were less expensive from Amazon, but the yeast and sugar were cheaper at my store. Your costs may be slightly different depending on the store you go to and the ingredients you choose, but I cannot imagine it would be that much more expensive.<br />

Now for some of you, that might not be a savings? If you are buying a basic packaged loaf of bread at the market it could be cheaper. And then if you thrown in a coupon it is even less than<b> </b>homemade.<br />

For us, we almost always buy a loaf from the bakery and it is usually 3.99, sometimes 4.99. If you are trying to save money and this is the bread you like as well, you could save yourself over a $1.00 per week by trying homemade.<br />
<br />
And there is no comparison between store-bought and homemade bread. The freshness and warmth of homemade bread right out of the oven cannot be beat.<br />

I use a really simple recipe and a single rise, so that most of the time I can finish a loaf in 3 hours or less. I have made some tweaks over the years but the basic recipe is similar to my <b><a href="https://www.suzyandco.com/2017/11/simple-homemade-bread.html" target="_blank">simple homemade bread.</a></b><br />

1.5 cups warm water<br />
1 tablespoon brown sugar<br />
3.25 cups flour - I love <b><a href="https://amzn.to/37anYQm" rel="nofollow" target="_blank">King Arthur bread flour</a></b> or <b><a href="https://amzn.to/2sGcXYg" rel="nofollow" target="_blank">Bobs Red Mill brand bread flour </a></b>when I can find it<br />
1 tablespoon sea salt<br />

I always, always, always use a<b><a href="https://amzn.to/2sDAUzt" rel="nofollow" target="_blank"> stand mixer</a></b>. I think it would really cool to use my hands sometimes. I love the idea of slow cooking and slow food. And although it is something I would love to move towards, for now I use my mixer. <br />
<br />
The other thing about this dough is that it is a wet dough and very sticky. I know it would drive me bonkers to have dough hands for 10 minutes kneading. <br />
<br />
I’ve added a tablespoon of sugar to help proof the yeast and to give it just a bit more sugar to help the bread brown.<br />
<br />

Instructions</h4>
In the bowl of a stand mixer place the yeast, warm water and brown sugar. You will see the yeast start to rise and bubble and dissolve. After ~5 minutes, add the flour and salt and with the dough hook attachment on your mixer, mix the dough on high ( I usually use a 7 or above) for ~10 minutes. The dough should pull away from the sides but once you take it out, it will be sticky. <br />

In a large bowl with greased sides, place the dough and cover with a towel. Place the dough in a warm place to rise for ~90 minutes - til it doubles in size.. I use my oven but in warmer months I use our sunroom. <br />
<br />
I used to let it rise for 2 hours but I find that it really only takes 90 minutes to double. <br />
<br />
Punch down dough and form into a ball. I place the dough on a floured cutting board and cover with a towel for another 20 - 30 minutes while I heat up the oven. <br />
<br />
Preheat oven to 450 degrees. While it is heating, place your <b><a href="https://amzn.to/30y7yip" rel="nofollow" target="_blank">dutch oven</a> (this isn't the exact one I have but it is so pretty!)</b> in the oven so it also heats up. <br />
<br />
After ~30 minutes, place the dough ball in the dutch oven (careful because it is really hot and you don’t want to accidentally touch the sides - from experience). With a very sharp knife score the dough. This helps it expand. You can put one long slash down the middle or several diagonal slashes.<br />
<br />
Place lid on dutch oven and bake for 30 minutes. After 30 minutes, remove lid and bake for another 20-ish minutes until loaf is a nice golden brown. Take out of the oven and place loaf on a cutting board or rack to rest for ~10-15 minutes. You will want to cut into it right away, but try to refrain. </div>

I don't know if she wrote this to try to persuade others to obsess less about food, or she was just sharing about her love of eating. It doesn't really matter why. There is so much wisdom in this one little quote.<br />

The thing is, many of us are obsessed with everything we put in our mouths. It is in the interest of being healthy, yet is not healthy. It is one thing to be super excited about your next meal because you are going to your favorite restaurant to get your favorite meal. And the reason you don't eat it more is because it is 5 states away. It is another thing to be thinking about your next meal because you have been starving yourself with meal replacement shakes and cannot wait to chew your "sensible meal."<br />

I definitely did not invent this recipe. I saw if on a fellow instagrammers feed and thought I would try it. And even though this is not a recipe I have tested multiple times, when a recipe is this easy, you just have to share. I also often share recipes so that I can easily find them myself!<br />
<br />
I had no recipe or instructions. I just decided to wing it. You could totally do that too, but just in case you like instructions and guidance, here is my version of baked pancakes (confetti optional)<br />

Simple Baked Confetti Pancakes</h3>

Ingredients</h4>
Your favorite pancake recipe<br />
or<br />
2 cups white flour<br />
2 tablespoons brown sugar ( not packed)<br />
2 teaspoons baking powder<br />
2 teaspoons salt<br />
2 eggs, beaten<br />
2 cups milk<br />
1/4 cup melted butter or oil - I like <b><a href="https://amzn.to/2FOgcQm" rel="nofollow" target="_blank">avocado oil</a></b> for it's mild flavor<br />
1 teaspoon vanilla extract<br />
<br />
Optional ingredients<br />
<b><a href="https://amzn.to/361Cnxe" rel="nofollow" target="_blank">Confetti sprinkles</a> </b><span style="font-size: x-small;">(if you want natural)</span>, chocolate chips, cocoa powder, cinnamon<br />

Instructions</h4>
Preheat oven to 350 degrees.<br />
Line a <b><a href="https://amzn.to/2NtqppI" rel="nofollow" target="_blank">jelly roll pan</a></b> or baking sheet with a lip with parchment paper.<br />
Make your own pancake batter or<br />
In a medium bowl, mix the dry ingredients from above. In a small bowl beat the eggs and then add in the milk, oil and vanilla extract. Pour the egg-milk mixture into the dry ingredients and whisk well.<br />
Mix in optional ingredients you would like.<br />
Pour batter onto parchment lined sheet.<br />
Bake for ~15 minutes.<br />
Cut into squares.<br />
