using all our CSA - kale chips

We have been getting a lot of kale lately in our weekly CSA bag, much to the dismay of #1. I sauteed it one week with garlic and olive oil, which turned out pretty good, but did not impress #1. My second attempt was baked kale chips. I love them! #1, not so much. Oh well, at least they will get eaten.

Ingredients:
Kale - however much you have or want to make
Olive oil - I used a couple tablespoons for a big bunch
Sea salt - to taste

Preheat oven to 350 degrees. Wash kale and tear it into pieces about 2-3 inches big. Coat each piece with olive oil. I threw mine in a plastic baggie and tossed them in the oil.

Place on a cookie sheet. Sprinkle with the salt. Bake for ~ 20 minutes until crispy.

They turn a nice dull brown color, but the taste is really good. I swear.

  1. I would have no idea what to do with Kale...I'd probably throw it in a smoothie or soup! I wonder if you could add spices to flavor these chips to make them more popular?

    1. I guess they aren't for everyone. Oh well, at least one person in our household likes it.

  3. also adore kale chips! i sprinkle mine with a little fresh lemon juice, a sprinkle of ground cumin, and a few chili flakes (of course, salt and pepper too)... they're great crumpled in scrambled eggs!

    1. I like your idea of seasoning. I will try that if we get more.

  4. I love kale chips, too but I make them in a dehydrator. You could dehydrate in the oven at a low setting. They have turned brown because 350* is way too hot.

A tasty way to season them comes from Sunny's Raw Kitchen (search for Crissy's goddess chips)- this is so good. My kids devour them. And they're great for anyone interested in a paleo diet.

    1. That is a great tip. I didn't know to cook them lower. That would definitely make them look more appealing.

I'll check out the seasoning too.
