Homemade butterscotch squares recipe


My absolute favorite candy from See's is the butterscotch square, and this is the homemade recipe version.  It is a sweet, brown-sugary square, with a bit of that grainy brown sugar texture and it is covered in milk chocolate. They are addicting.

I love See's candy. For those on the west coast, you should know what I am talking about. For those on the east coast, you may not have had the pleasure of tasting a See's before. There are a few around I have noticed. There is a kiosk at the Newark airport. Not really convenient, but none-the-less, they do exist on this coast.


Homemade Butterscotch Squares Copycat Recipe

Ingredients

2 cups brown sugar, packed (organic is best)
1/2 cup brown sugar, packed (reserve for later)
3/4 cup heavy cream (from grass-fed is healthiest)
6 Tbsp butter (grass-fed is healthiest)
1/4 tsp. salt
1/2 tsp. baking soda
1/4 tsp. vanilla extract
1 1/2 cups confectioner’s sugar, sifted
Milk chocolate for coating - I used one 11oz bag of chips
~ 1 tsp. Coconut oil (optional)


Directions


Line a 9X9. I love using this to line it.

In a large sauce pan combine 2 cups brown sugar, cream, butter and salt.

Cook on medium heat stirring constantly until it begins to boil.












Reduce heat to low and continue a slight boil for 15 minutes. Stir every couple minutes to ensure it does not burn.








After 15 minutes, add baking soda. At this point the mixture will lighten up and foam slightly. That is okay.

Remove from heat.








Next add the vanilla extract. When I added mine it began to boil. I guess the alcohol was cooking off.
Add the confectioner's sugar. Mix well until all the sugar has been mixed in well.









Add the remaining 1/2 cup brown sugar.












Pour into lined pan and let cool for several hours. I made it 3 days ahead and just set it in a cool room until I was ready to cover it in chocolate.










Cut into ~1 inch squares.












Melt chocolate. About 1/4 of the way through covering the squares I realized that my chocolate was a bit too thick, so I added about a tsp of coconut oil to thin it out. It really made the chocolate go on much easier.








I tried several ways to cover the squares. In the end, I just ended up putting several squares in the chocolate, rolling them around, and fishing them out with a spoon.


Set on parchment paper and place in the fridge for about 10 minutes to set. As you can see, some are nice and smooth, while others are kind of gloopy.









And the result...Fantastic. They taste just like the See's version. I cannot wait to make them again.

I found this recipe online on several websites, in which it seems others just copied word for word. I would love to credit the original, but I am not sure who it is. I actually did not change the recipe (besides covering in chocolate) but I did put the directions in my own words.

UPDATE: When I originally found this recipe I could not tell who was the original source. Unfortunately, many people copied word for word from the original so it was hard to pinpoint who to credit. I did find the original source, but the website is no longer live (as of 12/14).
