gingerbread granola recipe



This homemade gingerbread granola is a really simple recipe that takes about 20 minutes and has all the yummy gingerbread flavor of the season.

Homemade granola is one of the easiest things to make. And it is so much healthier than sotre-bought granola. You can control the ingredients used and the amounts. I always like granola with a bit less sugar, so I tend to put less in my recipes.

Although this one happens to be gingerbread flavor, you can use whatever flavors you like.

Gingerbread Granola


Ingredients

~3 cups rolled oats - I like this brand
1/4 cup chopped almonds*
~4 Tbsp coconut oil
1 Tbsp honey
1 Tbsp molasses
1/2 tsp ginger 
1/4 tsp clove
1/4 tsp cinnamon
1 Tbsp flax seed meal (optional)


Directions

Preheat oven to 350 degrees.

Spread oats on a cookie sheet and bake for approximately 20 minutes. You will want to periodically stir them so that they do not burn. If you want to speed up this toasting time, you can broil them, but you have to watch them very carefully because they will burn easily. 

When you have about 1 minute left you can throw the almonds in and toast them as well. They will cook very fast also so watch carefully.

As your oats are cooking, combine the coconut oil, honey, and molasses in a small saucepan over low heat. You just want these ingredients to melt and meld together. Remove from heat and add spices
Once the oats and almonds are done, take them out of the oven and add the flax seed meal.
Then pour the sauce over the oats and mix it all well.
