simple homemade bread recipe


I have been making this bread every week, sometimes several times every week, for months now and it always turns out fantastic.

It is simple to do if you have the right equipment, it has simple ingredients, and it only takes 3 hours start to finish.

Ingredients

1 scan Tablespoon yeast
1 pinch sugar
1.5 cups warm (not hot) water
3.25 cups flour
1 scant tablespoon sea salt

Directions

In the bowl of a stand mixer place the yeast, sugar, and water. let sit ~ 5 minutes until the yeast is disintegrated and you start to see bubbles. If the yeast is still in granules in the water, your yeast might not be good anymore.
Next add the flour and sea salt and mix with the stand mixer and a dough hook on high for 5-7 minutes, until the dough pulls away from the sides and it looks like one big dough ball.
The dough will be wet.
The dough will be sticky!
It will stick to your finger when you poke it.
It is supposed to be this way. I have never done it by hand, nor will I ever do it by hand. I know I would be super annoyed and frustrated that my hands would be covered in dough the whole time.
Now place the dough in a large glass bowl and let it rise in a warm place for ~2 hours until it has doubled. An oven with the light on is a perfect spot.
Once it has risen, take it out of the bowl and place it in a floured cutting board. Shape it into a boule and let it rest.
Preheat the oven to 450 with a dutch oven in it.
Once the oven and dutch oven have been heated, place the dough on parchment paper and place in the dutch oven and cover with a lid.
Bake for 31 minutes (ok 30 is fine, for some reason I started doing 31 and now I can't do it for less).
Remove lid and bake for another 15 minutes.
Sometimes if the dough is not a nice golden brown I will bake it for another 5 or just put the broiler on for a minute or two to get the top nice and brown.

If you can, wait til it cooks to eat it so you don't burn your tongue. :)
