Homemade mayonnaise is so simple to make. This recipe only has 4 common ingredients you have in your pantry and fridge right now.
I have been making homemade mayonnaise for years. It tastes so fresh and the best part is that I can control all the ingredients.
When I started researching ingredients in foods, I realized that most store-bought mayos had less than ideal oil (usually canola - more on that in a sec) and because they are all shelf stable, they contained more preservatives than I would like. So I went searching for a basic mayo recipe and found one.
But before I share the recipe, let's talk about ingredients.

The main ingredient in mayonnaise is oil. And the main oils used in most store-bought mayo is soy and canola. Unfortunately, these 2 crops are the most likely crops to be genetically modified. I try to avoid genetically modified foods. I just think that we need more research and more evidence before I feel comfortable consuming them regularly. Your research might have led you to different conclusions, but for me, I am still not convinced that GMO foods are completely safe.
There are however organic soy products and organic canola. When something is organic, by law in the USA, in cannot have GMO ingredients. So not all soy is bad and not all canola is bad. I think canola has gotten a bad wrap and many have said that all canola is GMO but I have not found that to be true.
Nevertheless, most mayonnaises are not organic and even the ones that are use more processed ingredients in order to keep the product from going bad. This is why I choose to make homemade mayonnaise.
The ONE thing that makes this recipe always a success is my immersion blender. This is one of the few cooking appliances that I absolutely recommend. It really is simple, takes up very little space and can do so much in your kitchen. And I was never successful at amyo until I used one of these.
Simple Homemade Mayo
Ingredients1 egg
2 Tablespoons lemon juice
1/2 -1 teaspoon sea salt
1 cup oil - I prefer avocado oil. It is light in taste and very versatile.
Directions
In a small bowl or wide-mouthed mason jar, put the egg in and blend for about ten seconds.
Add the 2 tablespoons lemon juice and blend for 5 seconds.
Add the teaspoon salt and blend for 5 seconds.
Add 1/2 cup of the oil and blend for 10 seconds.
Slowly drizzle in the remaining oil while blending the entire time. You will begin to see the mayonnaise thicken up.
