simple one bowl pumpkin mini muffins

I have been making these mini pumpkin muffins for years. I love how simple they are and that you can make big batches for parties and holidays.

I also love that it is one bowl. You do not even need a mixer for this recipe. Just a bowl and a wooden spoon works great. Less stuff and better yet, less clean-up! That is always a plus for me.

The chocolate chips on top are optional but always a good idea.

One Bowl Pumpkin Mini Muffins


Ingredients

1 can pure pureed pumpkin
1/3 cup avocado oil
3/4 cup coconut sugar
2 eggs
2 tsp pumpkin spice
1 1/2 cups flour
1 tsp sea salt
1 tsp baking soda
~1 cup chocolate chips for sprinkling on top (optional)


Directions

Preheat oven to 350 degrees.
Grease a mini muffin pan
Place the pumpkin puree, oil, sugar, eggs, and pumpkin pie spices into a bowl and mix until blended.
Add the flour, salt and baking soda and blend until just mixed and smooth.
Fill muffin cups about 3/4 full and sprinkle with chocolate chips, if using.
Bake for ~12 minutes.
Makes  ~ 30 mini muffins

These muffins are so easy and perfect for a large get together. You can make a double batch easily. I found the original recipe on the Cilantropist and have since modified it over the years.
