This is a newer recipe for me. Although I make granola often, I haven't added macadamia nuts. This granola is a new breakfast favorite.
All ingredient amounts are approximate. Granola is so forgiving so you can really make it your own to your taste.
Coconut Lime Macadamia Nut Granola

4 cups oats, toasted (I always use the thick cut)
1/2 cup shredded coconut
1/2 cup macadamia nuts - cut into small pieces
1/4 cup coconut oil
1/4 cup honey
splash of lime juice
1 tsp lime extract

I toast the oats in the oven at about 350 for maybe 15 minutes. As they are toasting I heat up the coconut oil and honey. Once melted, I take off the heat and add the juice and lime extract. Once the oats are toasted, toss in the shredded coconut and nuts and then pour the coconut oil/honey mixture on top and stir it all together to coat.
