Pumpkin season is right around the corner and pumpkin spice will be everywhere. I was not ready for pumpkin a week ago, but now I am starting to crave it. 

I love using pumpkin in snack foods because it helps change things up from the rest of the year. Not only that but it increases the nutrition of the snack. 

Pumpkins are a fantastic source of beta-carotene. Beta-Carotene is a precursor for Vitamin A and an antioxidant. It helps support the immune system and may stimulate the release of cells in the body that attack cancer cells. 

It is also a good source of Potassium. Potassium supports the nervous system and the heart. It is important for water balance which can affect blood pressure. Potassium is also important for  muscle contractions and can help with cramping.
