I love anything mint. I have a whole Pinterest board dedicated to peppermint. So when I was thinking of making something sweet the other day, mint immediately came to mind.

And lately, my go-to base for desserts has been cream cheese. If you are looking for a really simple recipe that can come together quickly, these mints are for you.

4 ingredient cream cheese mints

Ingredients

8 oz Cream Cheese, softened
1 1/2 Tbsp. Honey
1 Tbsp coconut oil, softened or melted
1/2 tsp peppermint extract

Chocolate topping/dipping ingredients(optional)
1/4-1/2 cup chocolate chips
Additional 1 tsp coconut oil

Directions

In a bowl, mix all ingredients with either a mixer on low or simply by hand. Mix until smooth and creamy.

Place mixture in a pastry bag or plastic bag and squeeze out into little droplets of approximately quarter sized.
Place in the fridge or freezer.
If you would like to dip or drizzle them in chocolate, melt the chocolate and coconut oil together. Take the mints out of the freezer, dip in chocolate, then place them back in the fridge or freezer to harden.

Store in the fridge when not popping them in you mouth.

*Technically, when you drizzle the chocolate on top it adds to the number of ingredients. So then it would make it 7 ingredients.
